What is a chocolate mug cake?

This might seem like a silly question but if you have never had one before we’re here to break the news that you were totally missing out. No need to worry, we’re here to deliver on a recipe that will definitely make up for the lost time.

A chocolate mug cake is exactly what it sounds like. It’s a simple recipe that resembles a chocolate cake or brownie, yet all comes together in a mug in the microwave. No electric mixer or fancy tools needed. Just a few easy pantry ingredients, a mug, and a microwave. In less than 5 minutes you’ll have what resembles a baked chocolate cake but took way less time and effort yet still delivers all the ooey and gooey chocolate goodness.

Tips to make the best chocolate mug cake

Use a wider mug or small microwave-safe bowl for a much cake recipe. Avoid using tall, skinny mugs as this will prevent the cake from rising properly and might make it difficult to cook the cake evenly.

Ensure to thoroughly combine all the ingredients together. No need to go crazy whisking the ingredients but do make sure to scrape the bottoms and sides of the mug to scoop up any ingredients you might have missed.

We recommend mixing ingredients with a fork or whisk to help break apart any lumps.

Don’t over-cook it. Cook in 30-second intervals and check on it in between as everyone’s microwave is different and no one wants a rubbery or gummy cake. The chocolate cake will continue to cook a little as it sits in the mug so it’s okay to slightly under bake it.

Which brings us to our next point of letting it cool for a few minutes before digging right in. We know the temptation that might occur, but this step will really make a difference in making the perfect chocolate cake texture.


Here’s what you’ll need to make a chocolate mug cake

Almond flour – There’s always a base flour used in preparing almost any type of baked good. We love using almond flour, it’s a great gluten-free flour alternative but feel free to use whatever you have on hand. Note that we’ve only tested almond flour for our recipe

Coconut sugar – For little added better-for-you sweetness.

Almond butter – Acts as the egg in this recipe. It’s gooey and perfectly nutty stickiness helps to bind the ingredients together. Peanut butter, cashew butter, or any other type of nut butter work just as good.

Coconut oil – Helps improve the texture and overall consistency of the chocolate cake. It’s a fantastic vegan alternative to butter.

Almond milk – A touch of liquid to make a perfectly moist and chewy cake.

Dark chocolate chips – Chocolate on top of chocolate because why not?

How to make a chocolate mug cake

First, prepare your mug with a very light coating of non-stick baking spray or a plant-based butter alternative if you’re vegan, just to ensure the cake doesn’t stick to the mug.

In the same mug, add in your dry ingredients and mix well.

Add in almond butter and almond milk and mix until a smooth batter remains and there are so visible clumps. If it is too thick, add another splash of milk and mix until a smooth batter forms.

Fold in your dark chocolate chips and save a few more chips and any other mix-ins of your choice to add on top later.

Microwave for 1-2 minutes, or until it reaches your desired consistency. You can follow the tips above to walk you through the cooking process to ensure a perfectly moist and decadent cake. The longer it cooks the denser it will be, if you prefer a chocolate cake that is more moist and gooey, stay closer to the 1-minute mark. Everyone’s microwave is different so keep an eye on it while it’s in there.

Allow the cake to sit for one minute outside of the microwave before enjoying it! Serve just as it is, alongside ice cream or pair with frozen yogurt!

  • 2 tbsp blanched almond flour
  • 1 tbsp coconut sugar
  • 1 tbsp Copina Co. Cacao Calm powder
  • 1/8 tsp baking powder
  • 1 tbsp almond butter
  • 1 tsp melted coconut oil
  • 2 tbsp almond milk
  • 1 tbsp dark chocolate chips

Instructions:

  1. In a mug, add your dry ingredients and mix well. Add your almond butter and milk and mix until a smooth batter remains. If it is too thick, add a little extra milk.
  2. Fold in your chocolate chips. Top with extra chocolate chips/mix-ins of choice. Microwave for 1-2 minutes, or until cooked.
  3. Allow the mug cake to sit for one minute, before enjoying it!
