This is my absolute favorite new snack- Baked Sweet Potato Wedges with Green Pea & Avocado Dip! It’s so perfect for the end of summer and takes just minutes to make. The pea & avocado dip is totally refreshing and goes beautifully with the sweet potatoes. I love this recipe on its own or with a bowl of veggies for lunch. It tastes almost as heavenly as it looks and is a fantastic way to spice up your palate with ingredients that are likely in your kitchen right now.
1 large or 2 medium sweet potatoes
2 tablespoons olive oil
1 tablespoon coriander
1 teaspoon chili powder
¼ tsp sea salt
Preheat oven to 375*
Wash and slice the sweet potatoes into thick wedges. Pour them into a bowl, top with the remaining ingredients, stir, and spread onto a baking sheet. Bake for 20-25 minutes, then remove from the oven, let cool, and enjoy!
